Microwave Mexican Casserole

List of Ingredients
1 lb. ground beef or veggie burger
1 small onion, chopped
2 c. taco chips, crushed (a sealable plastic bags works well to crush) (I use fat-free or baked chips)
1 pkg. taco seasoning mix
1 (16 oz.) can whole tomatoes (undrained)
1 c. sour cream (I use fat free)
1 c. cheddar cheese, shredded (I use fat-free or low fat)
Recipe
Brown beef and onion in a sprayed skillet.
In a 1 1/2 qt. microwave-safe casserole place a layer of 1 c. taco chips. Cover with beef, dry seasoning mix, tomatoes (cut in quarters), sour cream and cheese. Top with remaining taco chips.
Microwave on HIGH, uncovered, 5 to 6 minutes until cheese melts and casserole is heated through.
