Loony Tuna Burgers

Serves: 6
List of Ingredients
1 (12 oz.) can tuna packed in water, drained
2 large potatoes, peeled, steamed, and mashed
1/2 c. finely diced onion or 3 finely diced green onions
1/3 c. egg substitute
2 t. sweet pickle relish
Juice of 1/2 fresh lemon
Salt and pepper to taste
3/4 c. nonfat saltine cracker crumbs (crumbled fine)Recipe
Preheat oven to 375 degrees.
In a large bowl, mix all ingredients except the saltine crumbs. Shape the tuna mixture into 6 palm sized patties. Refrigerate or freeze for 10 minutes.
Spread the saltine crumbs in a shallow baking dish and gently coat each burger.
Coat a nonstick baking sheet with nonstick cooking spray and bake burgers for 35 to 40 minutes, or until the burgers are golden brown and the outsides look crispy. Turn the burgers once during the baking for even crispness.
Variation: serve on toasted wheat or sourdough English Muffins with shredded lettuce and reduced fat Thousand Island or honey-dijon mustard.
