1/2 c. nonfat softened cream cheese
1/2 c. chopped onion
2 garlic cloves, minced
1/2 c. evaporated skim milk
1 large egg, lightly beaten or egg sub. equiv.
2 1/4 oz. grated Parmesan cheese (or 1/3 of this if powdered)
2 c. hot cooked fettuccine (or your favorite noodle)
1 T. fresh parsley chopped or 1 t. dried
1 T. chopped fresh chives or 1 t. dried
Recipe
Spray a medium nonstick skillet with nonstick cooking spray; add onion and garlic. Cook over medium heat until softened, about 2 minutes.
Reduce heat to low; gradually (to keep mix from curdling) whisk in the milk, cream cheese and egg. Add 2 oz. of the Parmesan and all the fettuccine; toss to combine. Cook over low heat until cheese is melted, about 1 minute.
Transfer to serving dish; sprinkle with remaining cheese, parsley and chives.
