3/4 lb. ground beef or veggie burger
1 (6 oz.) can tomato paste
1 T. instant minced onion
1 t. Italian seasoning
1/2 t. salt
1 (10 oz.) can refrigerated biscuits (I use Pilsbury, they have less fat)
1/2 to 3/4 c. Mozzarella cheese, shredded (I use low-fat or fat-free)Recipe
In a sprayed skillet brown beef and drain (if necessary). Stir in tomato paste, onion and seasonings (mixture will be thick); cook over low heat for 5 minutes, stirring frequently.
Place biscuits in sprayed muffin tin, pressing to cover bottom and both sides. Spoon about 1/4 cup meat mixture into biscuit-lined cups and sprinkle with cheese.
Bake at 400 degrees for 12 minutes or until golden brown.
