    Serves: 4 - If non-fat bread crumbs are not available, substitute a mixture of cornmeal and whole wheat flour or make your own from fat-free bread or crackers.

    List of Ingredients




    1 c. fat-free bread crumbs
    1/2 t. dried oregano
    1/2 t. dried basil
    1/2 t. paprika
    1/4 t. minced dried garlic
    1 t. minced dried onion
    freshly ground pepper to taste
    1 egg white, lightly beaten, or reduced fat/fat free egg product equal to 1 whole egg
    2 whole chicken breasts, skin removed, split into halves

    Recipe



    Preheat oven to 375 degrees.

    In a shallow bowl, combine bread crumbs, oregano, basil, paprika, garlic, onion and pepper.

    In another bowl, place egg white or egg product. Dip each piece of chicken in egg, and then in bread crumb mixture.

    Place chicken on a shallow pan that has been lightly coated with nonstick spray. Bake uncovered for 1 hour or until chicken is brown. Turn once so that chicken browns on all sides.
