2 c. potato chips, finely crushed
1/4 t. salt
1/4 t. pepper
1/4 t. curry powder
1/8 t. ginger
1 (3 lb.) chicken, cut up
2 eggs, beaten or egg sub. equiv.
1/4 c. milk
1/2 c. butter or margarine, melted (I use low fat or fat free)
Recipe
Mix potato chips, salt, pepper, curry powder and ginger.
Combine eggs and milk.
Pour butter into shallow baking dish.
Dip chicken in chips, then in egg mixture, then in chips again.
Put pieces side by side in dish; bake at 375 degrees for 45 minutes.
