3 chicken breasts, split, or 2 lbs. frying chicken cut into pieces
6 T. plain or seasoned bread crumbs
1/2 t. onion powder
1/2 t. salt or celery salt (or to your taste)
1/2 t. pepper (or to your taste)
1/2 t. paprika
Recipe
Preheat oven to hot, 400 degrees.
Trim any fat from the chicken and rinse the chicken under cold running water.
Combine the remaining ingredients in a heavy paper bag and add the chicken pieces, a few at a time, shaking until they are lightly coated.
Put the chicken (skin side down) in one layer in a shallow nonstick pan well sprayed with cooking spray. Put the pan in the middle rack in the oven and bake the chicken, turning it (skin side down) midway during the cooking, for 35 to 45 minutes.
