Summer Chicken Salad

Serves: 6
List of Ingredients
2 c. cooked and torn-up chicken
3 T. nonfat mayo or sour cream
1 T. lemon juice
1/2 t. curry powder
1 T. finely chopped parsley (1 t. dried)
1/8 c. raisins
2 T. toasted almonds (optional)
1/2 c. chopped celery
1/4 c. chopped scallions
Salt and pepper to tasteRecipe
Mix all ingredients. Use with your favorite bread or pita pocket or place on a bed of lettuce.
