List of Ingredients
1/4 c. chopped onion
1 1/2 c. frozen corn, thawed under hot water for 1 minute
1 1/2 c. vegetable broth
pinch cayenne pepper
1 med. potato, peeled, cubed and cooked
1 T. chopped fresh parsley (1 t. dried)
1/2 T. chopped green onionRecipe
Saute' onion in a pot with non-stick cooking spray until onions are very limp.
Put 3/4 of the corn and 3/4 of the broth in a blender and process until smooth. Add the puree to the pot of onions.
Add the cayenne pepper, potatoes, and remaining corn and broth.
Heat through. Sprinkle parsley and green onion on top and serve.
