Cream of Potato Soup

List of Ingredients
3 potatoes, peeled and sliced
1 onion, chopped
2 c. chicken or turkey broth (I use fat free)
1 1/2 c. water
1 can (13oz.) evaporated skim milk
Salt and white pepper to taste
2 T. minced fresh parsley (2 t. if dried)
Recipe
Combine the potatoes, onion, broth and water in a saucepan and simmer the mixture, covered, over low heat for 35 mintutes.
In a blender blend the mixture on high speed until it is smooth. Return it to the saucepan and heat to boiling. Add the milk and simmer for 5 minutes.
Season to taste. Garnish with parsley.
