Vegetable Soup

List of Ingredients
1/2 c. chopped onion
1 clove garlic, chopped
2 cans (14 1/2 oz. each) chicken broth (I use fat-free)
1 can (28 oz.) crushed tomatoes
1/3 c. alphabet pasta (or your favorite)
1/2 c. fresh parsley leaves (or 1/3 of this amount dried)
1 c. chopped broccoli
1 c. chopped carrots
1 c. sliced celery
Salt and pepper to taste
2 T. grated Parmesan cheese, optionalRecipe
In a saucepan sprayed with cooking spray, cook the onion and garlic about 2 minutes.
Add chicken broth, tomatoes, pasta and parsley to saucepan. Bring to a boil. Reduce heat and simmer 10 minutes.
Add broccoli, carrots and celery to soup. Cook 10 minutes. Add salt and pepper to taste.
Before serving can sprinkle with Parmesan cheese, if desired.
