List of Ingredients
2 c. cooked or canned black beans
1/2 c. frozen corn, thawed (run under hot water for 1 minute)
1/4 c. salsa (mild or hot, depends on your taste)
1 c. grated nonfat cheddar cheese
4 English muffins, split
1/2 c. chopped red pepper, salad sprouts or chopped green onions
Recipe
In a medium saucepan, combine black beans, corn and salsa. Cook uncovered over medium heat for 10 minutes.
Add cheese and simmer for 2 to 3 minutes or until cheese begins to melt.
Toast English Muffins. Place a portion of beans on each muffin and top with red pepper, sprouts or green onions.
