Potato Hash

List of Ingredients
2 large potatoes, peeled and diced
1 med. onion, diced
1 green pepper, diced
1 red pepper, diced
1 c. frozen corn-thawed (run under hot water for 1 minute)
1 t. poultry seasoning
1/4 c. chopped fresh parsley or cilantro (or use 1/16 c. dried)

Cook potatoes in water until just tender, about 5 minutes. Drain.
Place onion and peppers in saucepan sprayed with cooking spray. Cook, stir frequently, about 4 minutes. Add corn and cook 1 minute. Remove from heat. Add potatoes, seasoning, parsley or cilantro and pepper. Mix well.
Place in sprayed skillet and cook until potatoes brown slightly - about 10 minutes. Can be served with salsa or BBQ sauce.
