    List of Ingredients




    1 small russet potato
    1/4 c. low-fat or fat-free cottage cheese
    1 T. salsa
    1 T. chopped fresh cilantro (parsley may be substited)
    Paprika

    Recipe



    Scrub potato and pierce with fork on both sides.

    Microwave on HIGH 3 to 5 minutes, or until potato feels soft when pressed. (Turn potato over after two minutes for more even cooking)

    Let stand 2 to 3 minutes.

    Slice potato in half and scoop potato pulp from shell, leaving 1/4" border.

    In small bowl, mash potato pulp with cottage cheese, salsa and cilantro.

    Spoon mixture back into shells. Sprinkle with paprika.

    Microwave on HIGH 2 minutes, or until heated through.
