Twice Baked Potatoes

List of Ingredients
4 medium russet potatoes, scrubbed
1/4 c. vegetable broth
1/2 c. nonfat sour cream
1 c. frozen or fresh broccoli, cooked until just tender but still bright green
1 t. Butter Buds
1/2 t. salt
1/2 t. white pepper
1 c. shredded nonfat cheddar cheeseRecipe
Bake potatoes in 400 degree oven for 35 minutes, or until done OR microwave 15 to 20 minutes. Cool, cut in half lengthwise, and scoop out pulp, leaving 1/4 inch of potato inside skin. Put pulp in bowl with broth and sour cream. Mash. Add broccoli, butter, salt, pepper and cheese. Fill potato skins.
Return to 400 degree oven for 15 mintues, or until top is brown.
