CHOCOLATE CUPCAKES

¾ c. flour ½ c. water
½ c. + 1 Tbsp. Brown Sugar packed ¼ c. apple sauce
3 Tbsp. unsweetened cocoa ½ tsp. apple cider vinegar
½ tsp.baking soda 1½ tsp. melted margarine
¼ tsp. salt ½ tsp. vanilla
Recipe
Combine dry ingredients in mixing bowl. Combine liquid ingredients in separate bowl and pour over dry ingredients and mix thoroughly. Using a muffin baking pan, with non-stick cooking spray coat each muffin cup and then fill half full with batter. Bake at 350 degrees for 18-20 minutes. Test with toothpick. Let cool for 5 minutes, then remove from pan and put on cooling rack.
Yield: 12 cupcakes Each cupcake = 1 point
