    Chocolate Cherry Pudding

    3 c ff milk
    ½ cup sugar
    1/3 c unsweetened cocoa powder
    3Tbl cornstarch
    1 oz unsweetened chocolate, finely chopped
    ¼ c dried cherries
    ½ tsp vanilla extract
    ½ tsp almond extract

    Recipe



    Combine the milk, sugar, cocoa powder & cornstarch in a med saucepan over med-high heat. Cook, stirring constantly, until the mixture bubbles & thickens, about 10 min
    2. Remove the pan from the heat & stir in the chocolate until it melts. Stir in the cherries, vanilla & almond extracts.
    3. Divide the pudding among 6 bowls and serve at once, let cool to room temp or chill.
    Serves 6 about ½ each 3 pts per serving
    180 cal 4 g fat 3 g fiber
