    Fiesta Chicken

    List of Ingredients


    • 2 whole chicken breasts, boned and skinned
    • 1/4 cup all-purpose flour
    • 3 red or green peppers or 1 red and 2 green
    • 1 Tbsp oil
    • 1 Tbsp butter
    • garlic salt, optional
    • dash salt
    • dash freshly ground pepper
    • 1/2 cup white wine, chicken broth or apple juice
    • 1 chicken bouillon cube dissolved in 1/2 cup water


    Instructions


    1. Rinse chicken breasts, split in half. Cut each piece again in half, making 8 pieces in all.

    2. Dip chicken pieces in flour, shake off excess.

    3. Rinse pepers, remove seeds and membranes. Slice.

    4. Heat butter in a skillet. Brown chicken pieces all around. Sprinkle with garlic salt, salt and pepper. Remove from skillet. Keep warm.

    5. Heat oil in pan. Add peppers. Cover with lid. Cook peppers for avout 5 minutes, shaking pan frequently. Remove from pan.

    6. Add bouillon cube dissolved in water to pan. Stir to dissolve pan drippings and juices. Add wine.

    7. Add chicken and peppers to pan. Cover with lid.

    8. Heat and cook for about 6-7 minutes or until chicken is done.

    9. Sprinkle with some fresh herbs, if available. Or add thinly sliced green onion.



    Final Comments


    Tips: You may add some crumbled cooked bacon over dish before serving.
    Serves 4.
