1 cup sliced carrots
1/2 cup water
1 cup chopped broccoli
1 cup cauliflorets
1 cup sliced zucchini
1 cup 1-inch pieces green beans
2 cups cooked brown rice or bulgur wheat (I used Uncle Ben's
Instant Brown Rice)
1 jar (about 16 oz Marinara Sauce (I used Hunt's Low-fat Traditional)
1 cup coarsely shredded low-fat Cheddar Cheese
Recipe
1) Heat oven to 375 degrees. Grease a 2-quart baking dish.
2) Scatter carrots over bottom of a large nonstick skillet. Add water and bring to a boil. Reduce heat, cover and simmer 4-minutes.
3) Add remaining veggies and simmer 6-minutes or until all are crisp tender. Drain if necessary.
4) Place rice in prepared baking dish. Top with cooked veggies. Pour Marinara Sauce over veggies, cover and bake 30-minutes or until hot and bubbly.
5) Sprinkle cheese on top and bake uncovered 5-minutes or until cheese melts.
