2 green peppers, diced
1 onion, diced
1/2 cup vegetable broth
3 cups cooked instant rice
1 cup V-8 juice
3 Tablespoons ketchup
1/8 teaspoon pepper
Recipe
1. Preheat oven to 350º F.
2. Saute peppers and onions in broth until tender.
3. Prepare rice according to directions.
4. In large bowl, combine rice and remaining ingredients; mix well.
5. Add pepper mixture to rice; mix well.
6. Place rice mixture into a medium nonstick baking dish.
7. Bake for 20 minutes.
