1 shallot, minced
1 clove garlic, minced
2 tsp. fresh parsley, minced
1/2 cup butter, softened
1 tsp. dill weed
1 tsp. oregano
1 tsp. salt
4 pieces chicken (breast or legs preferable), skin on
Recipe
Preheat oven to 350 F. In a bowl, combine all ingredients except chicken. Blend until smooth. Slip 2 Tbsp of the herb butter under the skin of each chicken piece. Bake until brown, basting with pan juices occasionally, about 60 minutes.
