2 boneless skinless chicken breasts cut into strips (or
1/2 lb. medium size shrimp)
1- 8 ounce package quartered mushrooms
3 or 4 skinned, seeded, tomatoes, roughly chopped
1 tsp. minced garlic
1/2 tsp. dried Italian herb blend
1/4 c. white or red wine
3 to 4 T. butter
3/4 cup small shell or elbow pasta
Parmesan cheese - grated

Put a 2 qt. pot with water and a pinch of salt on to boil for the pasta, (follow directions on box for cooking) then drain and leave in colander until ready.
In a skillet set on medium high put 1 to 2 T. olive oil. Quickly cook chicken or shrimp, add mushrooms and garlic. When the meat and mushrooms are done, add the tomatoes- wine and herbs. Cook for about 5 minutes and add the butter. Toss with the pasta until all is hot and serve with a little grated cheese on top. A crusty bread and a salad make a great
meal.
