    2 cups self raising flour
    2 heaped tablespoons butter or other fat
    1,5 cups mashed potato
    1/4 cup milk
    caraway seeds (optional)
    salt

    Recipe



    Mix butter into the flout and add a good pinch of salt. Then mix in the
    mashed potato and pour in the milk to make a soft (no slack) dough. Roll
    out on a floured board and cut into rounds about 3 in. across. Sprinkle
    a few caraway seeds on top of each cake and bake in a hot oven (450 �F. gas
    regulo 6-7) for 20-30 minutes. Eat them warm, split across the middle
    and spread with butter. This dough can also be use to line a savoury flan
    tin.
    Makes about nine cakes.
