Cheese Biscuits

3 cups all-purpose flour
1 1/2 tablespoons baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
2 tablespoons sugar
3/4 cup margarine -- cold
1 egg -- slightly beaten
3/4 cup buttermilk
1/2 cup shredded cheddar cheese
Sift dry ingredients together. Cut margarine into tablespoons and blend into dry ingredients. Stir 1/2 cup buttermilk into beaten egg and add to flour mixture. Stir quickly, adding remainder of buttermilk as necessary until dough forms a ball.
Turn onto floured surface and knead once. Mix in cheese while kneading. Let dough rest for a minute, then roll out to 3/4" thickness. Cut into 2" rounds. Place biscuits on buttered baking sheet, 1" apart. Bake at 400°F for 15 minutes or until golden brown.
Tips to Ponder
To test the quality of baking powder, put a teaspoon in one cup of hot water. If it bubbles a lot, it's good; if it doesn't, throw it out.
Leave a chopstick in the flour canister so you can level off measuring cups without reaching for-and washing-a knife.
