1/2 cup cornmeal
1-1/2 cups milk
2 beaten eggs
1/4 cup softened butter
1/4 tsp. salt
3 tsp. baking powder
1 cup grated cheddar cheese
1/4 tsp. crushed red chili peppers, (optional)
Recipe
Heat the cornmeal and 1-1/4 cups of the milk over a medium heat until it is thick and relatively dry. Spoon the cornmeal mixture into a bowl and add the remaining milk, butter and the eggs. Beat until the mixture is smooth. Stir in the salt, baking powder and if adding, the chili peppers and cheese. Pour into a casserole dish and bake at 325 degrees F for 35 minutes or until thoroughly cooked.
