2 tablespoons chopped onion
1 cup shredded cheese*
2 chicken boullion cubes
1 1/2 cup water
3 cups frozen or fresh broccoli
3 tablespoons flour
2 tablespoons butter**
1/4 teaspoon pepper
1 bay leaf

**use the real stuff here, don't substitute and use anything else.
In large saucepan, cook onion in butter until tender. Stir in flour and pepper until blended. Add milk all at once. Cook and stir until thickened. Add cheese and stir until melted. Remove from heat. In separate saucepan, combine boullion, water, bay leaf, and bring to a boil. Add broccoli and cook until tender. Add broccoli to cheese mixture, stir until blended. Remove bay leaf.
Tips to Ponder
Chicken or vegetable stock or broth can be substituted for boullion cubes. Instead of adding 2 cubes and 1-1/2 cups water, add 2 cups of broth.
Never cover a pot that has milk products in it, it will boil over onto the stove and burn inside the pot.
