4 cups chicken broth - low-fat okay
3 cups chopped fresh broccoli florets
1/2 cup chopped onion
1 bay leaf
1/2 tsp. salt
1/4 tsp. black pepper
1/4 cup all-purpose flour
1/3 cup cooked ham - diced
1/2 cup heavy cream
Recipe
-Combine chicken broth, broccoli, onion, bay leaf, salt, and pepper in large saucepan.
-Bring to boil. Reduce heat and simmer for 30 minutes.
-Remove bay leaf from pan.
-Puree half of soup and flour in blender. Return to saucepan.
-Simmer until thick, stirring constantly.
-Add ham and cream to saucepan.
-Stir and simmer for 10-15 minutes.
