3-4 medium green zucchini (cut in half lengthwise, then quartered and sliced)
3-4 yellow summer squash (do the same here... either like little triangles or leave in halves)
1 medium onion, diced
4 medium tomatoes (if you use plum tomatoes, use a couple more)
2 Tbsp minced garlic
2 Tbsp dried basil (although fresh is best!)
In a medium-sized pot, mix well and simmer over a medium heat (initially). Once it begins to boil a bit (all the while stirring frequently) turn down the heat a little and cover. Let simmer for about 15 minutes, stirring frequently.
All the veggies have their own liquid so there is no need to add more -- it's almost like a summer veggie stew! If you'd like, sprinkle some parmesan cheese on yours for taste.
