Mini Cherry Cheesecakes

I used parts of a couple similar recipes and changed them up to suit my tastes. Soooo easy!
List of Ingredients
2 8oz. packages cream cheese, softened (low fat)
1/2 cup sugar
1 teaspoon vanilla
8 oz. container Lite Cool Whip
2 15oz. cans cherry filling (low fat)
1 box Nilla Vanilla cookies
48 mini cupcake holdersRecipe
Mix cream cheese, sugar and vanilla until smooth. Add in Cool Whip. Place 1 cookie on the bottom of each mini cupcake holder. Fill each mini cupcake holder with cream cheese mixture about 3/4 full. Place 1/2 teaspoon cherry filling on each mini cheesecake. Chill for 1-2 hours. Serves 48.
