    List of Ingredients


    • 12 hard cooked eggs,peeled
    • 1/4 cup regular mayonnaise
    • 2 tsp honey Dijon mustard
    • Salt and Pepper to taste


    Instructions


    1. Cut eggs in half lenghtwise. Remove yolks. With fork,mash yolks;add mayonnaise,mustard,salt and pepper. Divide amount in half. To each half,add ingredients for one of the variations below.

    2. Refill whites with yolk mixture and garnish as desired.
    3. Variations;
    4. Herbed: to half of yolk mixture,add 1 tbsp each minced fresh chives,minced fresh parsley and a pinch each dried tarragon and garlic powder. Garnish with cherry tomato wedges.
    5. California Style: To half of yolk mixture,add 1 tbsp minced sundried tomatoes 2 tsp minced fresh basil or 1/4 tsp dried, and a dash of balsamic vinegar. Garnish with chopped sundried tomatoes and fresh parsley.
    6. Smoked salmon devils: To half of the yolk mixture, add 1/4 cup mashed smoked salmon 2 tsp minced capers and minced fresh dill and lemon juice to taste. Garnish with smoked salmon and fresh dill.
    7. Shrimp and olives: To half of yolk mixture, add 1/4 cup mashed cooked shrimp, 1 tbsp minced fresh parsley and drained horseradish and lemon juice to taste.Garnish with small cooked shrimp.
    8. Greek: To half the yolk mixture, add 1/4 cup crumbled feta cheese and six large kalmata or ripe olives,pitted and chopped. Garnish with lemon slices, olive slices and oregano sprigs.
    9. French: To half of yolk mixture,add 1/4 cup chopped cooked spinach, well drained and 1/4 cup diced Brie Cheese. Garnish with chopped tomatoes.
    10. Italian: To half of yolk mixture add 1/4 cup finely chopped prosciutto and 2 tbsp parmesan cheese. Gaarnish with fresh parsley and chopped prosciutto.
    11. Mexican: To half of yolk mixture add 1/4 cup salsa and 1/4 cup finely shredded cheddar or jalapeno cheese. Garnish with chili powder, fresh cilantro and shredded cheese.
