Cookies and Cream Cake

- 1 Package pudding included white cake mix
- 1 1/4 Cups Water
- 1/3 Cups Oil
- 3 Egg whites
- 1 Cup coarsley crushed oreo cookies
- Frosting:
- 3 Cups powdered sugar
- 3/4 Cup shortening
- 1/4 Cup milk
- 1 tsp vanilla
Instructions
- Heat oven to 350. Grease and flour two 9 or 8 inch round cake pans. in a large bowl, combine all cake ingredients except crushed cookies.
- Mix at low speed until moistened; beat 2 minutes at high speed. By hand stir in the cookies. Pour batter into greased and floured pan.
- Bake at 350. for 25 to 30 minutes or until toothpick inserted in the center comes out clean. Cool 15 minutes; remove from pan. Cool completely.
- In a small bowl, combine all frosting ingredients; beat until smooth. To assemble cake; place 1 cake layer, top side down, on serving plate; spread evenly with about 1/4 of frosting. Top with remaing cake layer, remaining frosting.
