    • Cake;
    • 1 1/2 cup brown sugar
    • 4 eggs,divided
    • 1 1/4 cups oil
    • 1 tsp grated orange zest
    • 4 medium carrots,shredded about 4 cups
    • 2 cups flour
    • 1 tsp baking soda
    • 1 tsp ground cinnamon
    • 3/4 tsp baking powder
    • 1/2 tsp salt
    • 1/4 tsp ground cloves
    • 1 cup dried cranberries
    • Frosting:
    • 2 packages cream cheese
    • 3/4 cup butter or margarine
    • 2 cups icing sugar
    • 1 tbsp milk
    • 1/2 tsp grated orange zest
    • 1/2 tsp ground ginger
    • Sugared fresh cranberries


    Instructions


    1. Cake: Preheat oven to 350. Butter and flour 3 8 inch round cake pans.
    2. In bowl combine sugar and 1 egg until smooth. Beat in remaining eggs,oil and zest. Fold in carrots.
    3. With sifter sift flour,soda,cinnamon,baking powder,salt and ground cloves over sugar mixture.
    4. Gently sstir to combine,addig dried cranberries before dry ingredients are completely incorporated.
    5. Divide batter among pan. Bake 22-25 min or until tothpick inserted into centers comes out clean.
    6. Cool in pans on racks 10 min. Remove from pans;cool completely.
    7. Frosting; Beat cream cheese with butter until smooth. Stir in sugar,milk,zest and ginger. Place one cake layer on serving plate;spread with 1 cup frosting.Top with another cake layer, 1 cup frosting and remaining layer. Frost top and side of cake with remaining frosting.
