    List of Ingredients


    • Cake;
    • 1 1/2 Cups All-purpose flour
    • 1 Cup Whole wheat flour
    • 2 tsp baking soda
    • 1 tsp cinnamon
    • 1/2 tsp Salt
    • 1 Cup Sugar
    • 2/3 Cup Oil
    • 1 Can Crushed Pineapple in its own juices
    • 1/2 Cup Frozen Cholestrol free egg product, thawed
    • 2 tsp Vanilla
    • 2 Cups Shredded Carrots
    • 1/2 Cup Raisins
    • Light Creamy Frosting;
    • 4 oz. Light cream cheese, softened
    • 2 Tbsp margarine, softened
    • 1 Cup Powered Sugar
    • 1 tsp Vanilla


    Instructions


    1. Heat oven to 350. Grease and flour 13x9 inch pan. In medium bowl, combine all purpose flour,whole wheat flour,baking soda,cinnamon and salt;set aside.
    2. In a large bowl, combine sugar,oil,pineapple, egg product and 2 tsp vanilla;beat well.
    3. Stir in flour mixture;mix well. Stir in carrots and raisins. Pour batter into greased and floured pan.
    4. Bake at 350. for 30 to 40 minutes or until top springs back when touched lightly in center. Cool competely.
    5. In a small bowl, combine cream cheese and margarine; beat until smooth. Gradually beat in powdered sugar and vanilla. Spread over cooled cake.
