List of Ingredients
- Cake;
- 1 1/2 Cups All-purpose flour
- 1 Cup Whole wheat flour
- 2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp Salt
- 1 Cup Sugar
- 2/3 Cup Oil
- 1 Can Crushed Pineapple in its own juices
- 1/2 Cup Frozen Cholestrol free egg product, thawed
- 2 tsp Vanilla
- 2 Cups Shredded Carrots
- 1/2 Cup Raisins
- Light Creamy Frosting;
- 4 oz. Light cream cheese, softened
- 2 Tbsp margarine, softened
- 1 Cup Powered Sugar
- 1 tsp Vanilla
Instructions
- Heat oven to 350. Grease and flour 13x9 inch pan. In medium bowl, combine all purpose flour,whole wheat flour,baking soda,cinnamon and salt;set aside.
- In a large bowl, combine sugar,oil,pineapple, egg product and 2 tsp vanilla;beat well.
- Stir in flour mixture;mix well. Stir in carrots and raisins. Pour batter into greased and floured pan.
- Bake at 350. for 30 to 40 minutes or until top springs back when touched lightly in center. Cool competely.
- In a small bowl, combine cream cheese and margarine; beat until smooth. Gradually beat in powdered sugar and vanilla. Spread over cooled cake.
