    Low Fat Zesty Shrimp and Pasta

    List of Ingredients


    • 1/3 package Linguine Pasta
    • 3/4 cup Italian Dressing divided
    • 2 cups sliced fresh mushrooms
    • 1 small onion, thinly sliced
    • 1 can artichoke hearts,drained, cut into quarters
    • 1 pound cleaned large shrimp
    • 1 tbsp chopped fresh parsley
    • 1/4 cup Parmesan Cheese


    Instructions


    1. Cook pasta according to package directions. Drain.
    2. Cook mushrooms,onion,artichoke hearts in 1/2 cup dressing while pasta is cooking. Add shrimp and parsley and continue cooking until shrimp is pink and vegetables are tender.
    3. Toss with hot cooked pasta and remaining salad dressing. Sprinkle with cheese.
