Marbled Steak Strips

- 1 1/2 pound beef fillet
- 1/3 cup butter
- 1 onion,sliced
- 12 muchrooms,sliced
- 1/4 cup flour
- 1 tbsp tomato paste
- 1 cup beef broth
- salt to taste
- freshly ground black pepper
- 1/2 cup sour cream
- 1 tbsp finely chopped parsley
Instructions
- Cut beef into strips.
- In a large skillet,melt 2 tbsp butter. Cook onion for 4 min or until tender. Remove to plate.
- Cook beef,in batches until browned.Remove.Add remaining butter cook mushrooms for 2 min. Remove.
- Stir flour into pan drippings,then tomato paste. Stir in broth until smooth. Return steak,mushrooms and onion to pan,cook just to heat through.
- Season to taste with salt and pepper.
- Transfer to warm serving dish;gently stir in sour cream,creating a marbled effect.
- Sprinkle with chopped parsley.
