    • 1 pound boneless loin roast cut into 1 inch pieces
    • 1 (20 oz) jar salsa
    • 1 (4oz) can chopped green chillies, drained
    • 1 (15oz) can black beans, rinsed and drained
    • 1 cup shredded Monterey Jack cheese


    Instructions


    1. Mix pork, salsa and chillies in a 3 1/2 to 4-qt slow cooker.
    2. Cover and cook on low heat for 6 to 8 hours or until pork is tender. Stir in the beans. Cover and cook on low heat about 5 min or until hot.
    3. Spoon over rice and sprinkle with cheese.
