    • 1 Tbsp Olive Oil
    • 2 Green onions, thinly sliced
    • 1 tsp garlic,chopped
    • 1 Cup Lettuce, chopped
    • 2 Tbsp Parsley,chopped
    • 1/2 tsp dried basil
    • 1/2 tsp dried oregano
    • 4 Pork cutlets
    • 4 slices Provalone cheese
    • Salt and Pepper to taste
    • 1/4 Cup All-purpose flour
    • 2 Medium eggs
    • 3/4 Cup Bread crumbs
    • 2 Tbsp Olive oil


    Instructions


    1. Heat the oil in a frying pan and saute the onions. Add the garlic,lettuce,parsley,basil and oregano. Cook for 1 minute over medium heat and remove from heat. Let cool.
    2. Top each cutlet with a portion of this mixture and a slice of cheese. Roll each cutlet and secure with 2 toothpicks or tie with butchers string, then flour each well. Dip the rolls in a mixture of eggs and milk, then in the bread crumbs.
    3. Preheat the oven to 180. Using a second oven-ready frying pan, heat the oil and braise the rolls for 2 minutes on all sides, then cook for 10 minutes in the oven.
