Parmesan Pork Rolls

- 1 Tbsp Olive Oil
- 2 Green onions, thinly sliced
- 1 tsp garlic,chopped
- 1 Cup Lettuce, chopped
- 2 Tbsp Parsley,chopped
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 4 Pork cutlets
- 4 slices Provalone cheese
- Salt and Pepper to taste
- 1/4 Cup All-purpose flour
- 2 Medium eggs
- 3/4 Cup Bread crumbs
- 2 Tbsp Olive oil
Instructions
- Heat the oil in a frying pan and saute the onions. Add the garlic,lettuce,parsley,basil and oregano. Cook for 1 minute over medium heat and remove from heat. Let cool.
- Top each cutlet with a portion of this mixture and a slice of cheese. Roll each cutlet and secure with 2 toothpicks or tie with butchers string, then flour each well. Dip the rolls in a mixture of eggs and milk, then in the bread crumbs.
- Preheat the oven to 180. Using a second oven-ready frying pan, heat the oil and braise the rolls for 2 minutes on all sides, then cook for 10 minutes in the oven.
