Pork Chops with Chunky Apple-Pear Sauce

- 3 apples, peeled, cored and chopped
- 1 pear, peeled,cored and chopped
- 1/4 cup brown sugar
- 1 tsp ground cinnamon,divided
- 1/2 tsp ground ginger,divided
- 3/4 tsp salt
- 1/2 tsp dried thyme
- 1/4 tsp pepper
- 6 pork chops 1 tbsp oil
Instructions
- In pot over medium high heat bring 1/2 cup water, apples,pear,sugar,1/2 tsp cinnamon and 1/4 tsp ginger to boil.
- Reduce heat to medium low,simmer, stirring, until fruit is just tender, 30-35 min.
- Remove from heat. Preheat oven to 350. Combine salt,thyme,pepper and remaining cinnamon and ginger.
- Rub mixture on both sides of chops. In nonstick skillet heat oil over medium high heat. Add chops,in batches,cook turning once, until browned, 1-2 min. per side.
- Transfer to rack set in shallow roasting pan. Roast until no longer pink near bone, 15 min. Serve with sauce.
