    List of Ingredients


    • 3 apples, peeled, cored and chopped
    • 1 pear, peeled,cored and chopped
    • 1/4 cup brown sugar
    • 1 tsp ground cinnamon,divided
    • 1/2 tsp ground ginger,divided
    • 3/4 tsp salt
    • 1/2 tsp dried thyme
    • 1/4 tsp pepper
    • 6 pork chops 1 tbsp oil


    Instructions


    1. In pot over medium high heat bring 1/2 cup water, apples,pear,sugar,1/2 tsp cinnamon and 1/4 tsp ginger to boil.
    2. Reduce heat to medium low,simmer, stirring, until fruit is just tender, 30-35 min.
    3. Remove from heat. Preheat oven to 350. Combine salt,thyme,pepper and remaining cinnamon and ginger.
    4. Rub mixture on both sides of chops. In nonstick skillet heat oil over medium high heat. Add chops,in batches,cook turning once, until browned, 1-2 min. per side.
    5. Transfer to rack set in shallow roasting pan. Roast until no longer pink near bone, 15 min. Serve with sauce.
