    Pot Roast with Sour Cream Gravy

    List of Ingredients


    • 2 tbsp flour
    • 1 tsp salt
    • 3 pound pot roast
    • 1 tbsp shortening
    • 1/2 cup water
    • 2 tbsp vinegar
    • 2 tsp dillweed
    • 5 small potatoes
    • 5 carrots quartered
    • 1/2 tsp salt
    • 1 pound zucchini quartered
    • 1/2 tsp salt


    Instructions


    1. Mix flour,salt,pepper.
    2. Coat meat and brown in large pot with shortening. Add water and vinegar.
    3. Sprinkle dillweed over meat. Cover tightly, simmer about 3 hours or until meat is tender.
    4. An hour before end of cooking time,add potatoes, carrots, and salt. @0 min before end of cooking time, add zucchini and salt. Serve with gravy.
    5. Gravy: PLace meat and vegetables on platter and keep warm. Using drippings and water, to make gravy; 1 tbsp of flour 10 1 cup of liquid, add salt and pepper to taste.
    6. When gravy is thickened,add 1 cup sour cream and 1 tsp dill weed. Heat through.
