Country Linguine

- 1/4 Cup Oil
- 2 Chicken breasts, cut into fine strips
- 1 Garlic clove, finely chopped
- 14 oz canned corn niblets,drained
- Salt and Pepper to taste
- 1/2 Cup Dry White wine
- 1 1/2 Cups 35% Cream
- 1 Red pepper, cut into thin strips
- 1 lb Spinach linguine,cooked
- 1/2 Cup Parmesan Cheese, grated
- 3 Tbsp Butter or Margarine
- 2 Tbsp Chives,Finely chopped
Instructions
- Heat oil in a saucepan. Cook the chicken breasts until golden on both sides. Add the garlic and the corn. Continue cooking for another 2 minutes.
- Season with salt and pepper to taste. Pour in the dry white wine and bring ot a boil. Add the cream and red pepper. Reduce until the sauce thickens, about 4 minutes.
- Add the pasta, Parmesn cheese and butter. Mix well, garnish with chives and serve.
