    • 1 to 1 1/2 cups uncooked elbow macaroni
    • 1/4 cup margarine or butter
    • 1 small onion,finely chopped
    • 1/2 tsp salt
    • 1/4 tsp pepper
    • 1/4 cup flour
    • 1 3/4 cups milk
    • 8 ounces process sharp cheddar cheese


    Instructions


    1. Cook macaroni as directed.
    2. Cook and stir margarine,onion,salt and pepper over medium heat until onion is slightly tender.
    3. Blend in flour.
    4. Cook over low heat,stirring constantly,until mixture is smooth and bubbly;remove from heat.
    5. Stir in milk.
    6. Heat to boiling,stirring constantly. Boil and stir 1 min,remove from heat.
    7. Stir in cheese until melted.
    8. PLace macaroni in ungreased 1 1/2 quart casserole. Stir cheese sauce into macaroni. Cook uncovered in 375 oven for 30 min.
    9. For ham and macaroni and cheese, stir 1 cup cut up fully cooked ham into the cheese sauce.
    10. For tuna and macaroni and cheese; stir in 1 can tuna drained,into the cheese sauce.
