    Chicken Cabbage Rolls

    List of Ingredients


    • 2 pound ground chicken
    • 2 cups rice, cooked in non fat chicken bouillon
    • non stick cooking spray
    • 3 medium onions,chopped
    • 2 cloves garlic,minced
    • 1/4 cup low fat chicken soup base
    • 2 egg whites, slightly beaten
    • Salt and Pepper to taste
    • 2 large Cabbage
    • Sauce:
    • 1 can tomato soup
    • 1 can tomato sauce (not spaghetti sauce)
    • 1/2 cup water
    • 1/2 tsp allspice


    Instructions


    1. Core and scald cabbage in boiling water. (Add 1 tbsp vinegar to water, this will keep the cabbage firm).
    2. Begin peeling leaves from cabbage as they become tender.
    3. Cut away rib and put to side. Tear leaf in half or appropriate size for rolling.
    4. Heat a non stick pan and saute onion and garlic.
    5. Add ground chicken to pan and lightly brown it, separating the meat as it cooks.
    6. Add salt and pepper to taste. Push chicken aside and drain fat.
    7. Combine cooked rice, browned chicken, chicken soup base and egg whites. Mix thoroughly.
    8. Place 2 tbsp of filling on cabbage leaf and roll, tucking in ends.
    9. Prepare a greased pan and line with the ribs and some leaves. Place rolls ( seam side down) into prepared pan.
    10. Combine sauce ingredients and mix well. Pour over cabbage rolls.
    11. Cover and bake in preheated oven at 325. for 2 -2 1/2 hours.
