Chicken Cabbage Rolls

- 2 pound ground chicken
- 2 cups rice, cooked in non fat chicken bouillon
- non stick cooking spray
- 3 medium onions,chopped
- 2 cloves garlic,minced
- 1/4 cup low fat chicken soup base
- 2 egg whites, slightly beaten
- Salt and Pepper to taste
- 2 large Cabbage
- Sauce:
- 1 can tomato soup
- 1 can tomato sauce (not spaghetti sauce)
- 1/2 cup water
- 1/2 tsp allspice
Instructions
- Core and scald cabbage in boiling water. (Add 1 tbsp vinegar to water, this will keep the cabbage firm).
- Begin peeling leaves from cabbage as they become tender.
- Cut away rib and put to side. Tear leaf in half or appropriate size for rolling.
- Heat a non stick pan and saute onion and garlic.
- Add ground chicken to pan and lightly brown it, separating the meat as it cooks.
- Add salt and pepper to taste. Push chicken aside and drain fat.
- Combine cooked rice, browned chicken, chicken soup base and egg whites. Mix thoroughly.
- Place 2 tbsp of filling on cabbage leaf and roll, tucking in ends.
- Prepare a greased pan and line with the ribs and some leaves. Place rolls ( seam side down) into prepared pan.
- Combine sauce ingredients and mix well. Pour over cabbage rolls.
- Cover and bake in preheated oven at 325. for 2 -2 1/2 hours.
