Chicken Cutlets with Spinach and Cheddar

- 2 Tbsp Margarine
- 1/4 Cup Onions,chopped
- 1/4 Cup Celery,chopped
- 2 Tbsp All-purpose flour
- 1 Cup Chicken Broth
- 1 Cup 2% Milk
- Salt and Pepper to taste
- 4 Chicken cutlets, skinless
- 1 Package Spinach, washed, cooked and drained
- 3/4 Cup Cheddar Cheese
Instructions
- Preheat oven to 200. Melt the margarine in a saucepan and saute the onions and the celery. Add the flour and margarine.
- Add the Chicken broth and milk. Season with salt and pepper and simmer for 5 to 10 mnutes until the sauce is smooth. Set aside and keep warm.
- Cut each cutlet in half and garnish with spinach. Place the chicken in a casserole dish and top off with cheese and sauce. Cook in the oven for about 15 minutes, then broil for 2 to 3 minutes. Serve.
