    Chicken and Broccoli Crisp

    • 1 pound boneless skinless chicken breasts
    • 2 tbsp butter, divided
    • 2 tbsp cornstarch
    • 2 cups milk
    • 2 tbsp Dijon Mustard
    • 1/4 cup mayonnaise
    • 1/4 cup sour cream
    • 2 tbsp leom juice
    • 1 1/2 tsp grated lemon peel, or to taste
    • 1 bunch broccoli
    • 3/4 cup fresh bread crumbs
    • 1/4 cup grated Parmesan Cheese


    Instructions


    1. Preheat oven to 350.
    2. Cut chicken into 1 inch cubes. In a large fry pan, melt 1 tbsp of the butter. add chicken and cook over medium heat until lightly browned. Stir in cornstarch.
    3. Add milk, stir until mixture comes to a boil and thickens. Add mustard, mayonnaise, sour cream, lemon juice and peel.
    4. Cut broccoli into florets, steam for 1 min and drain.Arrange broccoli in a 2 qt baking dish. Spoon chicken mixture over broccoli.
    5. In a fry pan, melt remaining butter, add bread crumbs and cook for 2 to 3 min. Sprinkle over chicken. Top with cheese.
    6. Bake for 15 min or until mixture bubbles around edges.
