Potato, Bacon and Cheese Soup

2 slices lean side bacon, chopped
1 large yellow onion, chopped
2 tbsp all-purpose flour
3 cups chicken stock
2 cups water
4 large boiling potatoes, peeled and chopped
1 cup grated cheese (cheddar)
½ tsp Worcestershire sauce
salt & pepper
Recipe
Cook bacon in a large saucepan over medium heat, stirring, until crisp. Spoon off all but 2 tablespoons of melted fat. Add onion (1 ½ cups), cook over medium-high heat stirring, until golden. Stir in flour and cook, stirring, 2 -3 minutes. Stir in stock slowly scrapping bottom of pan, stir in water, and bring to a boil. Add potatoes (about 3 ½ - 4 cups) and simmer, covered 10 minutes or until just tender. Stir in cheese, Worcestershire sauce and transfer to food processor or blender. Process until smooth. Return to saucepan heat through. Season with salt and pepper.
