Creamy Mushroom Potato Bake

- 3 pounds white potatoes,peeled
- 1 medium onion,chopped
- 1/2 pound fresh mushrooms, chopped
- 3 tbsp butter or margarine,divided
- 1/2 cup sour cream
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 cup parmesan cheese
Instructions
- Cook potatoes in salted water until tender;drain and mash ( do not add butter or milk).
- In a skillet,saute onion and mushrooms in 2 tbsp butter for 3-4 min or until just tender. Stir in potatoes along with sour cream, salt and pepper.
- Spoon into a greased 2-qt baking dish. Sprinkle with cheese; dot with remaining butter. Bake uncovered, at 400. for 20-25 min. or until heated through and golden brown.
