    • 3 pounds white potatoes,peeled
    • 1 medium onion,chopped
    • 1/2 pound fresh mushrooms, chopped
    • 3 tbsp butter or margarine,divided
    • 1/2 cup sour cream
    • 1/2 tsp salt
    • 1/4 tsp pepper
    • 1/4 cup parmesan cheese


    Instructions


    1. Cook potatoes in salted water until tender;drain and mash ( do not add butter or milk).
    2. In a skillet,saute onion and mushrooms in 2 tbsp butter for 3-4 min or until just tender. Stir in potatoes along with sour cream, salt and pepper.
    3. Spoon into a greased 2-qt baking dish. Sprinkle with cheese; dot with remaining butter. Bake uncovered, at 400. for 20-25 min. or until heated through and golden brown.
