Sweet and Savory Squash Rings

- 2 acorn squash, 3 lbs
- 3 tbsp honey
- 2 tsp packed dark brown sugar
- 1/2 tsp dried thyme
- 1/2 tsp salt
- 1/8 tsp pepper
Instructions
- Preheat oven to 375.
- Trim 1inch-2inch off each end of squash. Slice each squash into 4 rings; remove seeds.
- Coat jellyroll pan with cooking spray; arrange rings in single layer on pan.
- Combine honey,sugar,thyme,salt and pepper. Brush half of mixture onto rings.
- Bake until beginning to soften,15 min. Brush with remaining honey mixture bake until tender, 15 min.
