Date Nut Bread

Can be made into 3 mini loafs or muffins!
List of Ingredients
- 1 1/2 Cup Dates, chopped
- 1 1/2 Cup Boiling water
- 3 Tb. Vegetable oil/shortening
- 2 7/8 Cups Flour
- 1 1/2 Ts. Vanilla
- 1 1/2 Ts. Baking soda
- 1 1/2 Cup Brown sugar
- 2 1/4 Ts. Baking powder
- 3/4 Ts. Salt
- 1 1/2 Cup Chopped nuts
Instructions
- Combine dates, water and oil/shortening. Let cool.
- Combine the baking soda with the flour and mix well.
- Add the brown sugar, baking posder, vanilla, salt and nuts to the date mixture. Mix well.
- Gently fold in the flour and baking soda mixture into the date mix. If too dry, add a little more water.
- Bake in greased loaf pans/muffin pan at 325 F. for 25-30 mintues, or until cooked through.
