List of Ingredients
- 1/4 cup all-purpose Flour
- 1/2 teaspoon salt
- 1 2 1/2 to 3-pound white ckicken meat, cut up in big pieces
- 1/4 cup olive oil or cooking oil
- ****
- 1/4 cup chopped celery
- 1/2 cup chopped onion
- 1/4 cup chopped green pepper
- 2 cloves garlic, minced
- ****
- 1 16-ounce can tomatoes, cup up
- 1 8-ounce can tomato sauce
- 1 3-ounce can sliced mushrooms, drained
- 1/3 cup dry white wine
- 1 teaspoon salt
- 1/2 teaspoon dried basil, crushed
- 1/2 teaspoon dried rosemary, crushed
- dash pepper
Instructions
- Combine flour and the 1/2 teaspoon salt in a clear plastic bag or paper bag; add a few pieces of chicken at a time and shake. In an oven-going skillet, brown the chicken in hot oil; remove chicken.
- In same skillet cook onion, celery, green pepper, and garlic till tender but not brown. Return chicken to skillet.
- Combine tomatoes, tomato sauce, mushrooms, wine, the 1 teaspoon salt, basil, rosemary, and pepper. Pour over chicken. Cover and bake in 350*F oven till chicken is tender, about 1 hour. Remove the chicken to warm serving dish. Ladle sauce over top.
