Chocolate Zucchini Cake

Recipe Introduction
Some people like to add cocoa to the dry ingredients, but I haven't, so I don't know how much to add--my guess would be 4 teaspoons.
List of Ingredients
- 1/3 cup boiling water
- 2 cups finely chopped zucchini
- 2 cups all-purpose flour
- 1 1/4 cups sugar
- 1 1/4 teaspoons baking soda
- 1 teaspoon salt
- 1/2 cup vegetable oil
- 3 eggs
- 1 teaspoon vanilla
- 1 cup chocolate chips
- 1 cup chopped nuts (optional)
Instructions
- Pour boiling water on zucchini.
- Heat oven to 350 degrees.
- Grease and flour 9x13 inch pan.
- Beat zucchini in water and remaining ingredients except chocolate chips on low speed, scraping bowl constantly for 1 minute.
- Then beat on medium speed scraping bowl occasionally for 2 minutes.
- Stir in chocolate chips with a spoon.
- Pour into pan.
- Bake until toothpick comes out clean when inserted in center of cake (approx. 45 to 50 minutes).
- Let cool, then frost with Chocolate Frosting.
Final Comments
Chocolate Frosting for Chocolate Zucchini Cake
1/2 cup margarine or butter, softened
4 1/2 cups powdered sugar
4 to 5 tablespoons cocoa
2 teaspoon vanilla
*milk - depending on desired consistency
Mix margarine, powdered sugar and cocoa.
Beat in vanilla.
*You may want less vanilla and more milk--it all depends on taste. Add milk until you get the desired consistency...this could be anything from a couple of drops to a couple of teaspoons.
